20-Minute Sesame Miso Mac & Cheese
We’re calling it mac and cheese, but there’s actually no mac involved at all—just our brand new Sesame Miso Noodles. Their springy texture and deeply savory sauce do the heavy lifting, creating a fast, flavor-packed twist on a classic with only 6 ingredients. Brie brings the creaminess, cheddar adds the pull, and the Sesame Miso noodle sauce ties it all together in about 20 minutes. It’s an easy weeknight win or perfect side dish when you’re entertaining.

INGREDIENTS
- ½ cup panko breadcrumbs
- 2 tablespoons Momofuku Mild Garlic Chili Crunch
- 4 packs Momofuku Sesame Miso Noodles
- 3 tablespoons unsalted butter
- ½ pound brie cheese, rind removed and broken into small pieces
- ½ pound sharp cheddar cheese, grated
Directions
Heat a small skillet over medium heat, then add breadcrumbs and Mild Garlic Chili Crunch—making sure to get plenty of the oil, in addition to the crunch. Toast the breadcrumbs with the oil until lightly browned, for 2-3 minutes. Remove from heat.
Bring a large pot of water to a boil and cook the noodles for 2 minutes. Drain, reserving 1 cup of noodle water.
Return the pot to medium-high heat and add the butter, letting it melt. Add 1 cup of pasta water and bring to a boil, then stir in the sesame miso sauce packets and the brie, allowing it to melt into the water. Add the noodles back to the pot and begin stirring. Continue cooking for about another minute, until the sauce is thickened around the noodles, but there’s still some liquid left around the noodles. (The brie may be a little clumpy at this point.)
Turn off the heat, and start adding the grated cheddar a handful at a time, stirring until the cheese completely dissolves into the liquid. Repeat until all the cheddar is evenly combined and the sauce is cheesy and glossy.
When you are ready to serve, top with prepared breadcrumbs.
