30-Minute Crispy Chicken Katsu Sesame Miso Noodle Bowls

This oven-baked chicken katsu gets its golden, crispy coating from a combination of Kewpie mayonnaise and Momofuku Mild Garlic Chili Crunch breadcrumbs—a shortcut that locks in flavor and saves you the hassle of frying in oil. Layer the chicken over a bowl of Sesame Miso Noodles, then finish with a drizzle of Momofuku Sweet & Savory BBQ Sauce. INGREDIENTS

  • 2 cups thinly-sliced cabbage
  • 1 tablespoon sugar
  • Kosher salt
  • 2 tablespoons apple cider vinegar (or any vinegar, except white vinegar)
  • 2 cups Panko breadcrumbs
  • ¼ cup Momofuku Mild Garlic Chili Crunch
  • 1 pound thin-sliced chicken breasts
  • Kewpie mayonnaise
  • Momofuku Sweet & Savory BBQ Sauce
  • 4 packs Momofuku Sesame Miso Noodles

Directions

Heat oven to 450°F. (Optional: if you have a sheet pan with a wire rack, coat the wire rack in cooking spray or neutral oil and place on the sheet pan. Otherwise place a piece of parchment paper on a sheet pan.)

 

Toss cabbage with sugar, 1 teaspoon of Kosher salt, and 2 tablespoons of apple cider vinegar. Set aside until you are ready to serve your katsu. 


Add breadcrumbs to a medium bowl with Mild Garlic Chili Crunch and 1 teaspoon of Kosher salt. Massage the breadcrumbs with your hands so the Chili Crunch evenly coats all the breadcrumbs. (This will help them crisp up in the oven.)


Season breasts all over with Kosher salt, then coat in Kewpie mayonnaise. (You’ll need about 1 tablespoon per chicken breast.) Transfer to the breadcrumb mixture and press the breadcrumbs all over the chicken into the mayonnaise coating. 


Place the breaded chicken breasts on the prepared sheet pan (or on your wire rack) and bake for 13–15 minutes until the chicken is cooked through and the breading is starting to brown.


Cook Sesame Miso Noodles according to package instructions and toss with sauce packets and sesame seeds


When you are ready to serve, portion the noodles into 4 bowls. Thinly slice the crispy chicken breasts and add on top of the noodles. Drizzle with Momofuku Sweet & Savory BBQ Sauce, and a scoop of the prepared cabbage.
