Whenever we used to share our original Bo Ssäm recipe, we always got the same question—how do I make the glaze? As the Momofuku Bo Ssäm evolved over the years at Ssäm Bar, the team started making a glaze so that the Bo Ssäm would arrive at the table coated in a glossy sauce. The recipe for that glaze wasn’t in the original Momofuku cookbook, but with our new Momofuku Sweet & Savory Korean BBQ Sauce, you don’t even need a recipe. Just whisk it with some of the pork drippings, spread it on, and now your Bo Ssäm too can arrive at the table glossy and gorgeous.

This is a holiday spin on our classic Bo Ssäm recipe. For the cure, we add in Savory Seasoned Salt to give a rounder flavor. Then, on top, we sub in a sweet and spicy glaze made using Momofuku Chili Crunch Hot Honey. It’s best served for a crowd with lettuce wraps, or rolls, bing bread, more Chili Crunch and your favorite sauces. There’s really no wrong way to eat it. There will probably be leftovers—and this pork shoulder makes for excellent sandwiches the next day.

We’re not turkey people—but this is our new favorite holiday centerpiece. Our Momofuku Chili Crunch Hot Honey gives the turkey a subtle sweetness and a hint of heat. Because you take the drippings from the turkey after glazing it, the Momofuku Chili Crunch Hot Honey comes out in the gravy as well. (Pro tip: trim off the wings before you roast, and use them to make our Turkey Wing Noodle Soup.)

Spotlight-stealing Sides:

A retro classic—this recipe dates back to the 1950s from the Campbell’s Soup Company. Here, creamy miso and our savory Garlic Crunch (packed with a secret ingredient, mushroom powder) replaces the umami-rich Cream of Mushroom Soup. The result is a delicious spin on a true American tradition. The only thing we didn’t change is the crispy onion topping because, well, it’s just perfect as-is. 

Our roasted pumpkin ramen is actually a combination of pumpkin and Kabocha squash—we thought the squash added that extra hint of sweetness to round out the ramen. This recipe will be equally delicious as a part of a holiday spread or a weeknight dinner. Thanks to both our Sweet & Spicy Korean BBQ Sauce and our Sweet & Spicy Noodles, it’s packed with flavor and is ready in about 40 minutes. It’s also delicious if you make it ahead—just mix in the spinach right before you’re ready to serve. Serves 4.

These Brussels sprouts will be one of the easiest slides you’ll ever make. All you do is roast them until they’re charred, then top with an easy dressing made using our Sweet & Spicy Korean BBQ Sauce. It’s tangy, it’s savory, it’s just a touch spicy, and the best part—it’s great served warm, at room temperature, or even chilled. This means you can pull it straight from the oven to the table, or make it ahead and pull it directly from your refrigerator.

These easy fall noodles come together in 5 minutes with just 5 ingredients. They sub in perfectly as a side for your holiday dinner table. One recipe makes 2–3 main course servings or 6–8 side course servings.

Cheesy Black Truffle Chili Crunch Stuffing with Mushrooms

This stuffing is a savory superpower with mushrooms and our Savory Seasoned Salt and Black Truffle Chili Crunch. The black truffle flavor adds complexity without overpowering the stuffing—but you can easily sub in regular Chili Crunch as well.


Hot Honey Harvest Salad with Roasted Squash

We’ve offered lots of suggestions but this salad can easily be customized with your favorite fall flavors. The dressing is on the sweeter side to bring out the Momofuku Chili Crunch Hot Honey, so be sure to pack your salad with lots of tangy, salty, and savory toppings—or just go with our recipe below.


Charred Carrots with Savory Pistachio Crumble

This is one of the easiest Thanksgiving sides. The carrots roast whole, so there’s no chopping or cutting involved—plus, you could easily sub in any squash or other root vegetable if you’re not a carrot fan. The only must here—the savory pistachio crumble.


Cheesy Caramelized Onion Breadsticks

The roasted onions from our Momofuku cookbook are one of our favorite recipe starters. Here, we sub in shallots and stir in our Momofuku Chili Crunch Hot Honey at the end. Then, we fold them into puff pastry and bake into golden brown breadsticks.


The Best Mashed Potatoes
Chef Max Ng helped us come up the creamiest, most savory mashed potatoes ever. The secret: lots and lots of Momofuku Savory Seasoned Salt at all steps of the process. They’re perfect for any holiday table, but they’d go equally well on a weeknight when you need a quick and filling side dish.
We love quick pickles. This version adds the flavors from our Honey Soy-Glazed turkey to complete your holiday table.

Twice-Baked Chili Crunch Maple Syrup Sweet Potatoes
Roasting the sweet potatoes first makes them soft and creamy. Then, you dunk them in a glaze made with sweet maple syrup, our super savory Momofuku Soy Sauce, and spicy Momofuku Chili Crunch before baking again. With the toasted breadcrumbs, they’re crunchy, sweet, spicy—and just about everything you’d want for your holiday dinner table.
