Easy Choose-Your-Adventure Meatballs
We love meatballs as an easy way to make a quick meal. This is our master recipe—pick a protein and we'll tell you what herbs and Seasoned Salt to use. Use them on noodles, throw them in a sub, or toss them in sauce. The possibilities are endless.

Ingredients
- 1 lb ground meat (chicken, turkey, pork, lamb, or beef)
- ½ cup herbs (such as mint, parsley, or cilantro), chopped
- 2 cloves garlic, grated
- 3 tablespoons Momofuku Soy Sauce
- 1 tablespoon Momofuku Seasoned Salt (your choice)
- ÂĽ cup panko breadcrumbs
Directions
Heat the oven to 425°F.
Combine ground meat, ½ cup chopped herbs, grated garlic, 3 tablespoons Momofuku Soy Sauce, 1 tablespoon Momofuku Seasoned Salt and stir until mixed together. Add breadcrumbs and stir until just combined (you’ll no longer see breadcrumb clumps). Do not overmix here.
Roll into about 12 meatballs and place on a parchment-lined sheet pan. (Tip: if you coat your hands in oil, the meatballs are much easier to roll.)
Roast for 12–15 minutes for beef or lamb meatballs and 15–18 minutes for chicken, turkey, or pork meatballs—until each meatball is cooked through. Double check for doneness with a meat thermometer.
