Sheet Pan Sticky Sweet & Savory Chicken

INGREDIENTS
- 5-6 chicken thighs, bone and skin on
- 1/2 red onion (rough chopped)
- 1 red bell pepper (rough chopped)
- 2-3 sweet potatoes (halved length-wise)
- 1/2 tbsp Soy Sauce
- 1/2 tsp garlic powder
- Momofuku Sweet & Savory Korean BBQ Sauce
- green onions
- kimchi (optional)
Spicy Mayo:
- Momofuku Chili Crunch
- 1/3 cup Japanese mayo

Half your sweet potatoes length-wide, and score the exposed sides with a knife.
Add your chicken, potatoes, onion, and bell peppers to a sheet pan.
Drizzle on Momofuku Soy Sauce, garlic powder, and a good amount of Sweet & Savory Korean BBQ sauce. Mix everything well until all of the seasoning is nice and incorporated. Make sure to get under the chicken skin too.
Turn the chicken skin-side up, and the potatoes open-side down. Spread everything apart. Let it marinate while the oven comes up to temp.
Bake at 400F on the top rack for 50-60 mins.
While that bakes, prepare your spicy mayo. Combine mayo with as much Chili Crunch as you would like, I added about 1/2 tbsp. Mix well.
10-15 mins before the chicken is done, carefully brush on some more Sweet & Savory Korean BBQ Sauce so it gets nice, sticky, and beautifully caramelized.
Once the potatoes are soft and the chicken is done, remove from oven.
Serve with some green onions, spicy mayo, kimchi, and enjoy!
