Sticky Hot Honey Ribs

This recipe uses only 3 ingredients, plus the superpowers of our Momofuku Pantry favorites: our Chili Crunch Hot Honey, Soy Sauce, and Spicy Seasoned Salt, and delivers deliciously tender ribs. Level up your meal and add a little crunch with a recipe of our quick pickles. Serves 2-4.

INGREDIENTS

  • 2½–3 pounds pork spare ribs
  • ½ cup Momofuku Soy Sauce
  • ½ cup Momofuku Hot Honey
  • 1 cup apple juice
  • 1 tablespoon Momofuku Spicy Seasoned Salt
  • 2–3 sweet potatoes (or about 1½ pounds), sliced into ½ inch–thick pieces
  • scallions and sesame seeds (optional)

Directions

Heat oven to 350°F.

 

Combine Momofuku Soy Sauce, Momofuku Hot Honey, apple juice, and 1 cup of water in a large braiser and stir until smooth. Add ribs on one layer so they are mostly submerged in the liquid. (Add an additional cup of water, if you need more liquid to submerge them.) Season the top with 1 tablespoon of Momofuku Spicy Seasoned Salt. Bring the mixture to a boil, then cover and braise in the oven for 2 hours.

Remove from the oven, then increase the oven temperature to 450°.

Uncover and remove ribs from the braiser. Add sweet potatoes. (There should be enough liquid so they are nearly submerged in a single layer. If you have less liquid, add a little water.) Bring to a boil and cook on medium heat for 10 minutes, until they are starting to soften, and the glaze is starting to thicken. (If it is too thick, add a little water.)

Brush the tops of the ribs generously with the thickened glaze. Then place ribs on top of the sweet potatoes and roast in the oven uncovered for 6–8 minutes until the glaze is set on the ribs and the potatoes are bubbling.

Remove from the oven, top with scallions and sesame seeds if desired, and serve after they cool slightly.
